About Ghee
Ghee is butter that has been heated to remove most of its water and separate the milk solids from the clarified butterfat. It is used for frying, sautéing, roasting, baking, and finishing both savoury and sweet foods. Because it contains little water, it behaves differently from ordinary butter in a hot pan.
Ghee has a concentrated buttery aroma and a rounded, sometimes nutty flavour. It is usually a clear golden liquid when warm and a firm, opaque, or slightly grainy solid when cool. Filtering, heating time, and browning of the milk solids influence its colour, aroma, smoothness, and depth of flavour.
Ghee is sold in jars, tubs, or other containers as a ready-to-use fat. Warming liquefies it, while cooling restores a firm or grainy texture. It can be spooned into a pan, brushed over food, stirred into dough, or drizzled over a finished dish. More deeply browned versions are darker and more aromatic.

Portions & preparation
Use clarified butterfat as the reference form, distinguishing it from butter, browned butter, or blended cooking fats. Record the amount used in cooking and whether flavorings or spices are infused. A dish cooked with ghee should be evaluated with its other ingredients rather than represented by the fat alone.
Compare the right form: Match a reference to clarified butterfat sold as ghee, including any retained milk solids, flavorings, or blended oils specified on the label.
Diet considerations
Ghee is derived from animal milk, specifically butterfat, although formulation and residual milk components can vary. It is not equivalent to vegetable oil or dairy-free spread. Compatibility changes when blended with plant oils, used in meat dishes, or included in cereal-based preparations; the finished recipe determines overall dietary classification.
